Baked Oatmeal

I have had this recipe queued for awhile waiting for a morning with time enough to actually get it made. Not that it takes very long, but most mornings my kids wake up and demand to eat immediately, which precludes a lot of breakfast prep and bake time. So yesterday, the opportunity presented itself, and I jumped at the chance. This recipe is really simple and tasty, but as I ate, I was struck by how versatile it is. I added some slivered almonds myself, and you could add any nut of your choice, or dried fruit. You could use maple or fruit syrup. This may seem a little evil, but you could put chocolate chips or even nutella on this. Caleb had made some homemade carmel, and he ate the leftovers with that today! The sky is the limit. I may even make it again Sunday morning after my run!

This recipe comes from my cousin-in-law, Cydney.

Mix together:


1/2 C. butter (melted) or olive oil (I, of course, used butter)

2/3 C. brown sugar

2 eggs, beaten


Add:

3 C. rolled oats

2 tsp. baking powder

1 tsp. salt

1 C. milk


Mix well. Pour into 9x13 in. dish. Bake at 350º for 30 minutes.


Variation: add 1-2 cups finely chopped nuts.

Creamy Green Chili Chicken Enchiladas




I made this for company this past Sunday, and we were all quite delighted with it. I can't wait to make them again. I put the whole casserole together before church, covered it in foil, and stuck it in the fridge. After church, I turned on the oven, set the casserole on top to warm up a bit, and then baked it according to the recipe. Turned out great! I left off the cilantro, because it's not one of our favorite flavors, and we didn't miss it at all. And I used black beans because they are our favorite.


*Serves 4-6


Filling:
3 cups cooked, chopped chicken
2 (4 oz.) cans of green chiles, lightly drained
1 package (8 oz.) cream cheese, cubed, softened
1 can white or black beans, rinsed and drained (you can really use any type of bean you prefer here)


Sauce:
2 tablespoons butter
1/2 cup chopped onion (about 1/2 medium onion)
2 tablespoons flour
1/3 cup chicken broth
¼ cup milk
¼ teaspoon salt
¼ teaspoon pepper
1 can (7 ounce) green chile enchilada sauce
½ cup sour cream


8 ounces (about 2 cups) Monterey jack cheese, shredded
8 medium (soft taco size) flour tortillas
Handful of chopped fresh cilantro


Preheat oven to 375 degrees.


In a medium bowl, combine the softened cream cheese and green chiles. Mix well. Add the chicken and black beans. Mix to combine. Set aside.


In a large nonstick skillet, melt the butter over medium heat. Add the onion and cook, stirring occasionally, until the onion softens and starts to turn translucent, about 3-4 minutes. Sprinkle the flour over the onions and stir well. Cook for 1 minute, stirring. Slowly whisk in the chicken broth and milk. As you whisk and the mixture cooks, the flour will get less lumpy around the onions and the mixture will become smooth. Cook over medium heat until the mixture is bubbling and has thickened, about 4-5 minutes. Add salt and pepper. Remove the skillet from the heat and stir in the enchilada sauce and sour cream.


Lightly grease a 9X13-inch baking dish. Spread about 1/4 cup of the sauce on the bottom of the dish. Fill each tortilla with about ½ cup of the chicken/cream cheese filling. Top with a small handful of shredded cheese, a couple tablespoonfuls for each enchilada. Save at least 1/2 cup cheese for the top of the enchiladas. Roll the tortillas up and place seam side down in the prepared baking dish. Continue filling enchiladas until the dish is full (I can easily fit 8 enchiladas in one pan).


Pour the white sauce over the top of the enchiladas. Top with remaining cheese. Bake for 20-30 minutes until the enchiladas are bubbling, hot and lightly browned. Sprinkle fresh cilantro over the top and serve.

Four Cheese Mac and Cheese with Bacon

The only thing that could have made this better is more bacon! And, I kid you not, it tasted better as leftovers two days later! Win- win.

This recipe comes from the October 2010 Family Circle.

** disclaimer: This might be the most unhealthy recipe I have ever made! :) Yum, yum.

1 box (1 lb) cavatappi
6 slices bacon, diced (I will probably use 8 next time)
1 Tbsp unsalted butter
3 Tbsp all- purpose flour
2 C. milk
1/2 tsp. onion flakes
1/4 tsp. salt
1/4 tsp. pepper
1/2 lb sharp cheddar cheese, shredded
1 C. shredded colby-jack cheese
1 C. shredded mozzarella
8 slices Kraft deli deluxe American cheese

1. Heat oven to 350º. Coat a 3 qt. broiler- safe baking dish with nonstick cooking spray. Bring a large pot of lightly salted water to boiling.
2. Cook cavatappi 8 minutes in boiling water, then drain. Meanwhile, in a medium sized saucepan, cook bacon over medium heat until crisp, 6 minutes. Transfer to paper towels. Carefully pour off all but 2 Tbsp. drippings (I pretty much poured it all off). Add butter.
3. Whisk in flour until smooth. In a thin stream, whisk in milk. Stir in onion flakes, salt and pepper. Bring to a boil over medium- high heat, then reduce heat and simmer 2 minutes. In a large bowl, toss together cheddar colby- jack, and mozzarella.
4. Remove milk mixture from heat, whisk in American cheese (I broke it up a bit to make it melt faster) and 1 1/4 C. of the cheddar mixture. Toss bacon pieces with remaining shredded cheese.
5. In pasta pot, combine cooked pasta and cheese sauce. Pour half into prepared dish. Sprinkle with a generous cup of the bacon- cheese mixture. Repeat layers.
6. Bake at 350º for 20 minutes. Increase oven temp. to broil and broil 2 minutes, until top is lightly browned. Cool slightly before serving.

I mean, seriously, YUM!

Spinach and Cheese Strata & Garlic Butter Roasted Mushrooms

I tried two new recipes on Christmas day, both came from Smitten Kitchen, and both were a huge hit! The strata is meant to be made the night before, which is key, because it really cuts down on time in the kitchen when you are entertaining. The mushrooms were a simple, light, and tasty side dish addition to our Christmas dinner-- though I could probably do with all the capers, it was a nice change of pace.

Spinach and Cheese Strata

Adapted from Gourmet (sniffle), February 2003

Serves 6 to 8

1 (10 ounce) package frozen spinach, thawed, squeeze of all excess liquid, and chopped
1 1/2 cups finely chopped onion (1 large)
3 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon freshly grated nutmeg
8 cups cubed French or Italian bread in 1-inch cubes (1/2 lb)
6 ounces coarsely grated Gruyère (2 cups)
2 ounces finely grated parmesan (1 cup)
2 3/4 cups milk
9 large eggs
2 tablespoons Dijon mustard

Sauté onion in butter in a large, heavy skillet over medium heat until soft, about 5 minutes. Add 1/2 teaspoon salt, 1/4 teaspoon pepper and nutmeg and continue cooking for one minute. Stir in spinach, remove from heat and set aside.

Spread one third of the bread cubes in a well-buttered 3-quart gratin dish or other ceramic baking dish. Top with one-third of bread cubes,one-third of spinach mixture and one-third of each cheese. Repeat layering twice with remaining bread, spinach and cheese.

Whisk eggs, milk, mustard and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper together in a large bowl and pour evenly over strata. Cover with plastic wrap and chill strata for eat least 8 hours or up to a day.

The next day, let it stand at room temperature for 30 minutes while preheating the oven to 350°F. Bake strata, uncovered, in middle of oven until puffed, golden brown, and cooked through, 45 to 55 minutes. Let stand 5 minutes before serving.


Garlic Butter Roasted Mushrooms

1 pound mushrooms such as cremini or white, halved lengthwise if large
2 tablespoons capers, rinsed and chopped
3 large garlic cloves, minced
2 tablespoons vegetable oil
3 tablespoons unsalted butter, cut into pieces
2 teaspoons fresh lemon juice
1/4 cup chopped flat-leaf parsley

Preheat oven to 450°F with rack in middle. Toss mushrooms with capers, garlic, oil, 1/8 teaspoon salt and several grinds of pepper in a 1 1/2- to 2-qt shallow baking dish. Top with butter and roast, stirring occasionally, until mushrooms are tender and golden and bubbly garlic sauce forms below, 15 to 20 minutes. Stir in lemon juice and parsley. Serve immediately, with crusty bread on the side for swiping up the juices.

Christmas Menu

The holiday craziness has me totally slacking on blogging... I'm not even going to post a recipe, just some links to things I'm going to be making for Christmas day... Maybe you'll get some inspiration or last minute ideas.

We are spending Christmas morning at our house for the first time since Caleb and I got married.

For Christmas morning, we're having coffee, oj, and these cinnamon rolls.

Christmas brunch will be this breakfast casserole, bacon, and fresh fruit.

I'll also have plenty of this homemade vanilla- caramel half and half. In my opinion, half and half is a little slice of heaven on earth, and this recipe is brilliant! PS: If anyone can find me a glass pint bottle like the one in the picture on this link, I would be eternally grateful!

We're heading to Christmas dinner at my Grandmother's, and I'll be taking these buttermilk biscuits and this mushroom casserole.
